Ingredients
- Olive oil spray
- ½ cup sugar
- 1 tsp cinnamon
- ½ tsp ground ginger
- ¼ tsp ground cloves
- 200g pumpkin
- 3 eggs
- 2 x Rafferty’s Garden Pumpkin, Apple & Sweetcorn
- 1 x 385mL can evaporated milk
Storage tip: Store in the fridge and eat within 48 hours.
Step by Step Instructions
Step 1
Preheat your oven to 180°C. Lightly spray a pie dish with olive oil.
Step 2
Mix sugar, cinnamon, ginger and cloves in a small bowl.
Step 3
Steam or microwave the pumpkin until soft and mash well.
Step 4
Using an electric beater, beat the eggs in a large mixing bowl. Add the Rafferty’s Garden Pumpkin, Apple & Sweetcorn pouches and mashed pumpkin, then beat until well combined. Add the spice mixture and stir through.
Step 5
Slowly add the evaporated milk while beating the mixture on a low speed.
Step 6
Pour into the pie dish and bake for 40 minutes.
Step 7
Cool for about 15 minutes, then refrigerate for three hours before serving.
